The cod we import is all from the Gadus morhua species (the only one that can legally be called ‘bacalao’). It comes from Iceland, in the very cold waters around the Arctic circle that are its perfect habitat.
Our cod is line caught one by one using a hook. This technique, unlike net fishing, doesn’t damage the fish, since they don’t get squished or knocked around.
